Ingredients
For the Dough
1 cup One Degree Organics Sprouted Whole Wheat Flour
1½ cups organic white flour
1 cup warm water
1½ tbsp coconut sugar
2 tsp yeast
1 tsp salt
½ tsp Italian seasoning
2½ tbsp organic olive oil
For the Topping
1 tbsp organic extra virgin olive oil
1 tbsp Italian seasoning
2 tbsp vegan parmesan
½ tsp coarse or finishing salt
Instructions
1. Prepare your oven and pan
Preheat the oven to 200°F and lightly grease a large cast-iron skillet.
2. Activate the yeast
Add the warm water, coconut sugar and yeast to the bowl of a stand mixer. Stir and leave for about 5 minutes, until the mixture becomes foamy.
3. Prepare the dry ingredients
In a separate bowl, combine the sprouted whole wheat flour, organic white flour, Italian seasoning and salt.
4. Make the dough
Add the olive oil and flour mixture to the activated yeast. Using the dough hook, begin mixing on low and gradually increase the speed. Knead until the dough begins to pull away from the sides of the bowl.
Transfer to a lightly floured surface and continue kneading until smooth and no longer sticky, adding a little extra flour if necessary.
5. Shape and rise
Roll or gently stretch the dough to fit your prepared skillet. Place it in the pan, cover with a damp towel and allow it to rise in the warm oven for approximately 20 minutes.
6. Add the topping
Remove the risen dough from the oven and increase the temperature to 400°F.
Combine the olive oil, Italian seasoning, vegan parmesan and finishing salt. Use your fingertips to create the signature focaccia dimples across the dough, then distribute the topping evenly over the surface.
7. Bake
Bake for 20–30 minutes, until the focaccia is cooked through and golden. Allow it to cool slightly before slicing and serving.
