Ingredients (Serves 2)

For the Pasta

  • 1 pack Cadia Brown Rice Pasta
  • 1 cup Cadia Roasted Garlic Pasta Sauce

For the Creamy Roasted Red Pepper Sauce

  • ½ cup soaked cashews (soaked in boiling water for 15 minutes)
  • ¼ cup nutritional yeast
  • 2 roasted red bell peppers
  • 1 small onion
  • 6 cloves garlic
  • ½ cup plant milk of choice
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp dried oregano

For Topping

  • 1 cup roasted broccoli florets
  • 2 tbsp hemp seeds
  • ½ cup cherry tomatoes

Instructions

 

Cook the Pasta

  • Prepare the brown rice pasta according to package directions. Drain and set aside.

Build the Sauce

  • Add the soaked cashews, roasted red peppers, onion, garlic, nutritional yeast, plant milk, olive oil, sea salt, oregano, and roasted garlic pasta sauce to a blender.
  • Blend until completely smooth and creamy.

Heat & Combine

  • Pour the sauce into a skillet over medium heat and allow it to warm through for a few minutes.
  • Add the cooked pasta and toss until every piece is coated in the creamy roasted red pepper sauce.

Finish with Toppings

  • Transfer to serving bowls and top with:
    • Roasted broccoli florets
    • Cherry tomatoes
    • Hemp seeds
