You’ve got your pasta, your beans, a little sweetness, a little tang—and everything just balances out nicely. Nothing complicated, just good flavour and good texture in every bite.

Ingredients

  • 2 cups penne pasta (dry)
  • 1 (15 oz) can sweet peas, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 4 tbsp scallion, chopped
  • 3 cloves garlic, grated

Dressing:

  • 2 tbsp soy sauce
  • 2½ tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 4 tbsp extra virgin olive oil
  • Black pepper, to taste
  • Salt (for pasta water)
  • ¼ cup parsley, chopped
  • ¼ cup dried cranberries (optional)

Directions

  1. Cook your penne in salted water, then drain and set aside.
  2. In a large bowl, add the sweet peas, black beans, scallion, and garlic.
  3. Mix in the warm pasta, incorporating all ingredients.
  4. In a separate bowl, mix together the soy sauce, maple syrup, apple cider vinegar, olive oil, and black pepper.
  5. Pour the dressing over your pasta mixture and toss it until well coated.
  6. Add the parsley and cranberries if using, give it a final mix, and that’s it.
  7. Serve it just like that, or chill it in the refrigerator and enjoy it cold later—it works both ways.

For added protein, you can add roasted chicken or grilled shrimp.
