Dry Ingredients:

  • 1 cup almond flour
  • ¼ cup chickpea flour (toasted)
  • 2 tbsp cassava flour
  • 2 tbsp arrowroot flour
  • 2 tbsp oat flour
  • ¼ cup unsweetened shredded coconut
  • 2 tbsp ground flaxseed
  • 2 tbsp chia seeds
  • 2 tbsp hemp seeds
  • ¼ tsp sea salt

Wet Ingredients:

  • ¼ cup almond butter (or preferred nut butter)
  • ¼ cup maple syrup or date syrup
  • ¼ cup non-dairy milk (add more if needed)

Directions

 

1. Toast the Chickpea Flour

In a pan over medium heat, toast the chickpea flour for 2–3 minutes.
This step helps remove the raw taste and enhances the overall flavour.

 

2. Mix Dry Ingredients

In a large bowl, combine:

  • Almond flour (base flour)
  • Toasted chickpea flour
  • Cassava, arrowroot, and oat flour
  • Shredded coconut
  • Flax, chia, and hemp seeds
    Sea salt

Mix well until evenly combined.

 

3. Prepare Wet Mixture

In a separate bowl, combine:

  • Almond butter
  • Maple syrup (or preferred sweetener)

Mix until smooth, then add a pinch of sea salt.

 

4. Combine Everything

Add the wet mixture into the dry ingredients.
Gradually mix, then add non-dairy milk as needed until the mixture forms a thick, pressable dough.

 

5. Press & Set

Transfer the mixture into a lined pan and press down firmly to create an even layer.

Place in the fridge or freezer for 30–40 minutes until firm

 

6. Slice & Store

Once set, cut into bars or squares.

Store in the fridge and enjoy for up to 7–10 days.
